Chocolate lovers - this is some of the best home made chocolate ice cream you'll ever taste. You'll be proud that you made it all by yourself.

3/4 cup sugar

1 cup milk

1/4 teaspoon salt

2 tablespoons unsweetened cocoa powder

3 egg yolks, beaten lightly

2 oz. semisweet chocolate, chopped

2 cups heavy cream

1 teaspoon vanilla extract

Directions

In a saucepan, combine the sugar, milk, salt and cocoa powder. Cook over medium heat, stirring constantly. Bring mixture to a simmer.

Place the egg yolks into a small bowl. Gradually stir in 1/2 cup of the hot chocolate mixture. Pour egg and chocolate mixture into the saucepan. Heat until thick but don't bring to a boil.

Remove pan from heat and stir in the chopped chocolate. Keep stirring until all of the chocolate is melted. Pour chocolate mixture into a chilled bowl and refrigerate for two hours, until ice cream is very cold, stir occasionally.

After the chocolate mixture has cooled completely, stir in the cream and vanilla extract. Pour into an ice cream canister or maker and follow manufacturers instructions.

4 bananas, mashed

Directions

We always have people wanting more chocolate recipes. (It's so good to know I am only one of many chocoholics.) So here are more chocolate delights just for you. Choices include Amish Chocolate-Toffee Bars. These bars, in true Amish tradition, are simple but delicious three layer bars that are easy and quick to make. If you prefer candy, try the Triple Chocolate Clusters. These candies are clusters of various chocolates and coating over nuts and pretzels. Oh, go for it! Make them both.

AMISH CHOCOLATE TOFFEE BARS

CRUST:
1 cup flour
3/4 cup white sugar
1/2 cup butter

Preheat oven to 350 degrees.

Mix above ingredients and press into a 9 x 6-inch pan. Bake at 350 degrees for 15 minutes.

FILLING:

3/4 cup brown sugar
1/2 cup butter

Boil brown sugar and butter in a saucepan for one minute. Pour over the baked crust.

TOPPING:

1 cup pecans
1 cup chocolate chips

Sprinkle the pecans over the top of the filling. Bake at 350 degrees for 10 minutes. Remove from oven and while still hot, sprinkle chocolate chips over the top and spread to smooth. Cut into bars when cooled.

TRIPLE CHOCOLATE CLUSTERS

2 (4-oz each) white chocolate bars
1 cup milk chocolate morsels
1 cup semi-sweet chocolate morsels
1 1/2 cups chopped pecans
1 1/2 cups broken pretzels

Melt the white chocolate, milk chocolate and semi-sweet chocolate together in a heavy saucepan over low heat, stirring constantly. When chocolates are completely melted and blended, stir in the pecan pieces and pretzel pieces. Drop by heaping tablespoons onto lightly greased waxed paper. Chill in the refrigerator at least one hour. Store in an airtight container in the refrigerator for up to one month.

Yield: approximately 3 dozen

You can make a firmer candy by using 3 cups semi-sweet chocolate morsels and leaving out the milk chocolate and white chocolate.

Spicy Hot Chocolate Recipe

!±8± Spicy Hot Chocolate Recipe

Winter is coming up (at least if you are on my side of the hemisphere), and this means that is time again for a delicious hot chocolate. If you think that there is only one type ofhot chocolate you'll be surprised to find out there's a huge, interesting variety, behind it.

Here are a couple of examples of my best recipes. Let's start with a spicy one.

150gr (5 oz) dark chocolate, coarsely chopped

600ml (1 liter more than a pint) milk

200ml (7 fl oz) cream

1 egg

2 tbsp sugar

1 tsp vanilla extract

1 pinch grounded chili pepper

1 tbsp cinnamon

1 pinch of salt

Put the dark chocolate together with 250ml (8½ fl oz) milk and a pinch of salt in a casserole and melt it on a low heat. Add the remaining milk, cream, sugar, a chili pepper and cinnamon. Mix it well and let it cook for a couple of minutes until it's almost boiling, then take it off the stove.

In a bowl add the egg with the vanilla extract and whip it until pale and bubbly. Now add the melted hot chocolate one tablespoon at the time and mix well. Put the mix back into the casserole and let it on the fire for a couple of minutes, whipping it with an electric mixer, until the hot chocolate has increased its volume. Just make sure you take it off the stove before it starts boiling and there you go, your spicy hot chocolate is ready.
